The green Malabar Pepper comes from the mountainous, densely forested hinterland of the Malabar coast in Kerala in southwest India. This region is generally seen as the home of the pepper. Here the pepper is still harvested unripe by small farmers from the beginning of November to mid-January by hand and then dried under protected conditions. This green pepper has been produced in this region since the late 20th century and is usually offered in salt or vinegar. However, this disrupts the fine natural flavour of the green pepper. This is not the case with our green Malabar Pepper and it has a particularly fresh aroma and pleasant sharpness. Ths green pepper is delicious as a spice on pork, chicken fish or veal. This pepper is a must in a real French pepper sauce.
