Schinus berries from ther moist, warm areas of Brazil grow on shrubs and trees that can grow up to 12 meters high. The harvest of grape-like berries is from the end of November to the beginning of February. These berries belong to the Sumach crops and taste sweet, fruity with a slight sharpness and belong to the so-called spurious peppers. Due to the slightly sharp taste and the similar shape of a regular pepper, it is incorrectly referred to as pink pepper.
The pink-berry pepper fits perfectly with sauces, poultry, meat and game dishes, but is also suitable for sweet desserts and delicate vegetables such as asparagus or cheese. Because of the beautiful visual and decorative properties of the berries you can find them in many peppers and spices. Do not fill your spice mill just with the pink berries, the sweetener from the fruit peel will quickly clog the mill. So always mix the pink pepper berries in a mill with another type of pepper (cf. coloured pepper) to prevent blockage of the mill.
