TGSEB = Tellicherry Garbled Special Extra Bold - stands for particularly careful after drying by hand-selected thickest and most beautiful pepper berries. This noble rare pepper comes from the Periyar Wildlife Sanctuary in the Indian state of Kerala on the Malabar coast and is named after the port city of Tellicherry ( Thalassery). The taste of the almost ripe harvested pepper berries is very aromatic and slightly sharper than the regular black pepper. Of this quality, only small quantities of the best crops are processed into Tellicherry pepper every year. The colour is red-brown instead of black, which is because the berries are only harvested after relatively long ripening. For this reason, the pepper is often referred to as the late-harvest pepper. The Tellicherry pepper is more intense, nutty and warmer in taste than the regular black pepper. The smell is somewhat reminiscent of tea and sandalwood.
